From Aubrac, this high plateau on the borders of Rouergue, Gévaudan and Auvergne, Henri Pourrat, a writer born in Ambert, used to say: “In Aubrac, you're up in the air! (…) That raw taste of wind, bitter wild grasses, snow water, a taste of space…”
And Catherine Revel, mountain guide, adds: “A land of silence and space shaped
by the mysterious powers of the elements...” Discovering Aubrac is to fill your lungs
and to fill your soul with purity, is to fill your memories with history and legend
and to fill your heart with emotions and human warmth. A one-to-one encounter
with authentic countryside where you will meet natives that are attached to their region
and to their traditions. A whole way of life to be shared!
A land of cattle rearing and seasonal migration,
the Aubrac region is home to the famous fawn-coloured cow,
the star of the local cuisine. Spring, summer, autumn, the meadows and pasturelands are covered with beautiful flowers that also line
the hiking paths. In the winter, the snow transforms the plateau
into a fabulous cross-country skiing area.
