Why not try: aligot (a puréed potato and cheese dish, served by monks in days of yore), the local Aubrac beef, gizzard salad, head of veal in a gribiche vinaigrette (old Grandmother Auguy's signature dish), tripoux (tripe), Cantal and Aveyron cheeses, including the famous Laguiole, and many other specialities which you can sample alongside Entraygues or Marcillac wines.
